Summer Salad

InstaPot Artichokes

 2 artichokes, split clean fuzzy, trim pokey  8 cloves garlic , rough chop  2 tbsp butter  Spring of fresh tarragon, dill, or a Bayleaf Salt and pepper  

Trim the artichokes, remove pokey part of the leaf, cut in half lengthwise, scoop out fuzzy inside   

Place water in pressure  cooker. Use the rack if you have one- place artichokes on rack.   

Steam for 5 min. Release steam. Serve.

Berry Good Salad

6 cups organic mixed greens
1 cup berries of your choice (mix of slices strawberries, blueberries, raspberries, etc)
1 diced avocado
1/3 c sliced almonds


Toss together in a large salad bowl. Sprinkle with Kosher salt and cracked fresh pepper. Drizzle olive oil and Basaltic Vinegar to taste. (Approximately 2 Tablespoons of each)

Fumi Salad

2/3 cup oil
1/3 cup rice vinegar
1/2 teaspoon salt
2 tablespoons black pepper
2/3 Cup of pomegranate seeds
1 bunch green onions
1 cup sliced almonds

Opp- 2 packages Ramon noodles. Can find organic. Not gluten free.

Roasted Cauliflower

This is one of my original recipes. I hope you enjoy! Cauliflower is a personal favorite!

Ingredients:

1 medium head cauliflower, cut into florets, about 6 cups 3 tablespoons garlic infused olive or grasped oil 1/2 teaspoon salt 1/2 teaspoon freshly ground black pepper 1/4 cup fresh, finely grated Parmesan cheese

Preheat over to 425 degrees. In a bowl toss cauliflower with oil. Season with salt and peper. Spread on a baking sheet and bake for 20-25 minutes, or until tender. Carefully “stir” 1-2 times while baking to make sure it’s evenly roasted.

Immediately upon removal from the oven, sprinkle with the parmesan cheese.
